Barbadillo Amontillado Sherry

  • Amontillado is often considered the most representative style of sherry since it displays qualities of both styles of maturation. It should be served at a higher temperature than biologically aged sherries, around 54°F.
  • Amontillado is a Fino or Manzanilla that started with biological ageing under flor for the first three to eight years or so, and matured further (usually longer) in an oxidative way, without flor.

Varietal Composition: 100% Palomino Fina

Elaboration: Palomino Fino aged an average of 3 years in solera both under flor and oxidatively. 40 g/L RS.

Tasting Notes: Delightful light amber color. The smooth aromas tell of ageing in wood and reveal a touch of cinnamon; these same characteristics appear on the palate. Smooth and honest in the mouth with a pleasant persistence.

Founded in 1821, Barbadillo is without question Sanlucar de Barrameda’s most iconic producer of Sherry.  The thing we appreciate most about Barbadillo is that they’ve remained staunchly committed to tradition in the face of continued growth – Base wines are all still fermented in house through the company’s network of sixteen historic bodegas and the variety and depth of their soleras is breathtaking.  With the Sherry category seeing more excitement than ever before in history, Barbadillo is delivering big time, with a panoply of single vineyard and heirloom releases. From their groundbreaking ‘Solear’ Manzanilla to their almost impossible to procure ‘Reliquia’ series and everything in between, tasting through the Barbadillo lineup is an inspirational and energizing experience.
