WHY WE LOVE IT

  • With an average Solera age of over twenty years this Sherry has been designated VOS (Vinum Optimum Signatum or “Very Old Sherry”) status.
  • A very serious, dry and austere wine with huge intensity.

Varietal Composition: 100% Palomino Fina

Elaboration:  Like all amontillado sherries, this begins life as a manzanilla and ages for eight years under a film of yeast known as flor. After this, it spends a further seven years maturing with exposure to oxygen, creating a complex and dry sherry

Tasting Notes: Pungent and lengthy with notes of salted almonds, lemon zest and toffee. Almost stinging acidity brings this to a razor sharp finish and goes perfectly with dried, older cheeses.
