Barbadillo Palo Cortado Criadera Selection

Barbadillo Palo Cortado Criadera Selection

WHY WE LOVE IT

  • An outstanding and ethereal Oloroso, Palo Cortado is especially suited to long cellar aging.
  • La Sacristía is a small cellar within La Casa de Cilla. Built in 1782, this Andalusian style building was at once a palatial home, a warehouse, and an administrative center for the tithes paid to the Church until 1841.
  • La Sacristía is situated next to a Moorish patio of graceful arches and columns, and holds some of the finest and rarest Palo Cortado in existence—much of which is over one hundred years old.

Varietal Composition: 100% Palomino Fina

Elaboration: The Criaderas and Solera system is used and the wine undergoes biological and oxidative aging in American oak.

Tasting Notes: Mahogany in color, this Palo Cortado is ‘En Rama’ (unfiltered) with a complex nutty aroma and hints of old oak. Dry to taste with a smooth elegant dry fruit sensations and very long on the palate.

PRODUCER BACKGROUND

Founded in 1821, Barbadillo is without question Sanlucar de Barrameda’s most iconic producer of Sherry.  The thing we appreciate most about Barbadillo is that they’ve remained staunchly committed to tradition in the face of continued growth – Base wines are all still fermented in house through the company’s network of sixteen historic bodegas and the variety and depth of their soleras is breathtaking.  With the Sherry category seeing more excitement than ever before in history, Barbadillo is delivering big time, with a panoply of single vineyard and heirloom releases. From their groundbreaking ‘Solear’ Manzanilla to their almost impossible to procure ‘Reliquia’ series and everything in between, tasting through the Barbadillo lineup is an inspirational and energizing experience.
