Barbadillo Toto Brut
WHY WE LOVE IT
- TOTO Barbadillo is a sparkling wine from Cádiz, made mostly with palomino from albariza soils.
- The vines come from the Gibalbín and Sta Lucía vineyards in Jerez Superior.
- It is the third generation of sparkling wines in Barbadillo, the one in which the winery reaches its longest aging.
- Very dry sparkling wine that reveals the limestone of the region and that surprises with its freshness, possibly provided by those very spatial soils of the Marco de Jerez.
Varietal Composition: Palomino and Chardonnay
Elaboration: Double cordon pruning. Vineyards are located inland so that the grapes have a good maturation. Manual harvest.
Tasting Notes: Bright pale yellow in color with fine bubbles, they highlight finesse and elegance perfectly integrated in both nose and mouth.

PRODUCER BACKGROUND
Founded in 1821, Barbadillo is without question Sanlucar de Barrameda’s most iconic producer of Sherry. The thing we appreciate most about Barbadillo is that they’ve remained staunchly committed to tradition in the face of continued growth – Base wines are all still fermented in house through the company’s network of sixteen historic bodegas and the variety and depth of their soleras is breathtaking. With the Sherry category seeing more excitement than ever before in history, Barbadillo is delivering big time, with a panoply of single vineyard and heirloom releases. From their groundbreaking ‘Solear’ Manzanilla to their almost impossible to procure ‘Reliquia’ series and everything in between, tasting through the Barbadillo lineup is an inspirational and energizing experience.
