WHY WE LOVE IT

Varietal Composition: 45% Grenache, 35% Mourvèdre, 20% Carignan

Elaboration: Destemming, cold pre-fermentation maceration for 3 days and separate vinification for each grape variety. The alcoholic fermentation lasts between 5 and 7 days. A post-fermentation maceration is then carried out for 4 to 10 days for all the grape varieties. Use of stainless steel takns and new epoxy coated cement tanks, with temperature control. The malolactic fermentation of the Grenache is done in barrels. Mourvèdre and Carignan are partly aged in barrels for 6 months after malolactic fermentation. 60% of the wine is aged in American oak barrels and 40% in French oak barrels.

Tasting Notes: Deep purple with ruby highlights. Aromas of blueberry, vanilla and blackberry, associated with strawberry and sweet spices. Rich and opulent with velvety tannins. Notes of jam and a good length and persistent finish.
