Varietal Composition: 100% Chardonnay
Elaboration: The white wines of Domaine Jean Pascal & Fils are fruity and express a beautiful aromatic complexity, with very good acidity. Despite the summer heat, they present a beautiful balance and a classic freshness. This white wine is produced in the Bourgogne region in France. The terroir is clay and limestone.
Tasting Notes: A white Burgundy with the lightest touch of oak making it a treasure to enjoy. Pale-intensity lemon in color, this wine has an aromatic, medium-plus-intensity nose of quince, vanilla and clove baking spice, pear drop and white-rose blossom. On the palate the dry, medium-plus-bodied chardonnay has medium-intensity flavors suggested on the nose supported by medium acidity and completing with a medium finish. There is midpalate complexity and balance between the fruit and the baking spice.
The first Pascal arrived in Puligny in the early 20th century, marrying a local girl and working on the land. They had two sons and acquired some vineyards locally. During a lull of interest in burgundy sales they moved into vine production. Throughout the 1970s the domaine expanded to 15 hectares spread over four communes: Meursault; Puligny; Volnay, and Auxey. Today, Yann Pascal looks after the vineyards, whilst his wife Alexandra, is the winemaker and handles sales.
