- Halley & Lex is the newest addition to the Clairault Streicker family of wines.
- Planted in 1976, Clairault Streicker is one of the founding wineries of the Margaret River region located in Western Australia.
- Their entire portfolio is estate grown and certified sustainable.
Varietal Composition: 100% Sauvignon Blanc
Elaboration: Halley and Lex Sauvignon Blanc is cold pressed; the juice settled and then fermented in stainless steel. We matched a yeast strain specifically, to this wine in order to enhance the natural varietal characters of passionfruit and gooseberry. When fermentation was complete, the wine was then aged on its lees
with gentle batton age for about a month before bottling in July to retain freshness.
Tasting Notes: White pear, gooseberries and cut grass. Crisp entry of stone fruit and lemon zest with a refreshing natural acidity to balance the subtle creamy tones. The finish is clean and refreshing, with nuances of jasmine and apricots.
