Domaine Girault Sancerre “Le Vallon des Demoiselles”
WHY WE LOVE IT
- Made from vines that are 35 years old on average, the Sauvignon grape is grown on clay-limestone (60%) and limestone (40%) soils.
Varietal Composition: 100% Sauvignon Blanc
Elaboration: The pneumatic presses are filled with a belt to limit the crushing of the grapes. After a cold settling (46 °F), of 48 hours minimum, the musts ferments in thermo-regulated vats. The fermentation time is approximately 40 days. The wines are matured on fine lees during winter and then racked in April.
Tasting Notes: Gold in color with a very expressive, citrus nose. It will fill you with its mineral expressions, its finesse, and its freshness. The palate will be fruity, with citrus aromas, while preserving a roundness, typical of its terroir.
Located in Bué, in the heart of Sancerre, Domaine Girault is the continuation of a family business, resulting from a long line of winegrowers.
