Echeverria Cabernet Sauvignon Reserva
WHY WE LOVE IT
- The vineyards at Viña Echeverría are located in the Curicó Valley, at the 35th parallel south, and the rows are planted in an east-westerly direction to potentiate the sun’s exposure.
- They work with a model of micro viticulture, which means that each plot, no more than half a hectare, is identified according to its terroir and micro-climate and planted, pruned, irrigated and harvested accordingly, resulting in grapes of optimum quality and flavor.
- Estate grown fruit.
Varietal Composition: 95% Cabernet Sauvignon 5% Merlot
Elaboration: 100% hand-picked in 18kg boxes and carried to the estate winery immediately after cutting. Fermented in 25,000 and 15,000 liter stainless steel tanks for 7-10 days at 25-28C controlled temperature to dryness with selected and native yeasts (80/20). Fermentation finished without grape skin contact. 100% malolactic fermentation. Stored in temperature controlled stainless steel tanks through bottling. Aged in French used oak barrels for 4-5 months to add complexity and to achieve softer tannins
Tasting Notes: Bright red with purple hues. A round and vibrant Cabernet Sauvignon with plum and strawberry flavors combined with hints of red pepper and spices. The palate is smooth and well-balanced with a fresh and fruity long-lasting finish.
The Echeverría family came to Chile in the 1750s, from a little town called Amezqueta in the Basque region of Spain. They established agricultural properties just north of Santiago, where they planted vineyards, among other crops. Over time vineyard holdings have grown to 65 hectares, and Viña Echeverría remains a family-owned and managed estate winery, occupying the same location for as long as anyone can remember. Family owned wineries are, as we know, not at all the norm in Chile. This sets Echeverría apart and it shows in the personality of their finished wines.
