- Rebel and Muse Blanc de Blancs Sparkling wine is sourced from Paso Robles Wine Country a viticultural area located in San Luis Obispo County, California.
- The Rebel and Muse Blanc de Blanc was picked for maximum ripeness in fruit, thereby allowing the dosage to remain fairly low.
Varietal Composition: 100% Chardonnay
Elaboration: The grapes are whole Cluster pressed into a chilled tank. They are allowed to, settle overnight and are racked into another stainless steel fermenter, where it went through primary fermentation. The tank was then chilled to cold stabilize the wine before it was crossflow filtered and put to bottle for secondary fermentation. Aged en tirage for 18 months. Disgorged in April.
Tasting Notes: Off the palate you are greeted by bright acidity, notes of stone fruit, peach and apricot. The wine finishes with crisp green apple.
