Varietal Composition: Monastrell (Mourvèdre), Cabernet Sauvgnon, & Syrah
Elaboration: Manual harvest in boxes of 15 kg through strict selection. First in the plot and then in the entrance to the deposits of Monastrell, Syrah and Cabernet Sauvignon varieties. Maceration with the skins for 20 days making soft extractions by pigeage. The fermentation temperature reaches a maximum of 28°C to favor the diffusion of compounds responsible for the color, aroma, and flavor. The wine aging takes 12 months in new and second year-used American, French and Romanian oak barrels.
Tasting Notes: High aromatic complexity where the aromas of ripe black fruit are wrapped by the spicy and balsamic smell from the wood. Soft and voluptuous entry on palate. A polished and structured tannin that prolongs the persistence in the mouth and the aromatic flavors perceived in the nose.

PRODUCER BACKGROUND
Ego Bodegas is a Spanish winery located in Jumilla, a region known for its hot, dry climate and high-altitude vineyards. The winery is relatively new, established in 2011 by husband-and-wife team Santos Ortiz and Ioana Paunescu, with the goal of producing high-quality wines at affordable prices. The operation boasts 35 hectares (86 acres) of vineyard, predominantly planted to 50+ year old, ungrafted, bush vines with the Monastrell (Mourvèdre) grape. Their wines are known for being deeply fruity, concentrated, and highly perfumed.
Each bottle of wine from Ego bodegas carries the principles on which the winery was founded upon: Ego, Talento, and Infinito.
