Varietal: Sauvignon Blanc, Semillon
Elaboration: The Sauvignon Blanc and Semillon grapes are hand-picked, pressed, and cold-settled for 48 hours before being racked—mostly into neutral barrels, with 25% going into new French oak barrels—for fermentation at low temperatures. The juice spends 11 months on lees, with periodic stirring based on taste and aroma to enhance complexity.
Tasting Notes: On the nose, it offers honeyed tropical fruit and delightful floral aromas from the warm-weather Semillon, complemented by hints of peach and lemon from the Sauvignon Blanc. The palate is rich yet balanced, presenting mouthwatering acidity and flavors of passionfruit, white peach, and grapefruit.
