Fidelitas Quintessence Vineyard Cabernet Sauvignon

Fidélitas Quintessence Vineyard Cabernet Sauvignon

WHY WE LOVE IT

  • The Quintessence Cabernet is a blend of clones 169 and 191, sourced from one of the vineyard’s favorite sites on Red Mountain. It features two southern-facing blocks in the heart of Quintessence, characterized by steep slopes and rocky soils.
  • This wine showcases modern winemaking techniques, employing four oak-fermentation methods and ten types of new French oak barrels. Drink now through the year 2040.

Varietal: 100% Cabernet Sauvignon

Elaboration: Aged 28 months; aged in 70% new French oak. Wood fermentation consists of 55% in a 40 hL oak tank, 15% in 2-ton open top oak tanks, 13% in 500L roller barrels, and 12% in 500L upright barrels.

Tasting Notes: The aroma presents notes of baking spices, wet rocks, and blueberry, while the palate is concentrated with polished tannins, bringing forth wild berry, blackberry, and cherry flavors.
