Foolhardy Vintners Cabernet Sauvignon

Foolhardy Vintners Cabernet Sauvignon

WHY WE LOVE IT

  • The Foolhardy Vintners Cabernet comes from Red Willow (1991), Elephant Mountain (1999) and StoneTree (2006) vineyards, located in Columbia Valley.
  • The heart of this wine is from the two older vine Cabernet blocks at Red Willow and Elephant Mountain.
  • This compelling blend represents the best Cabernet Foolhardy could craft.
  • The wine gains texture and generosity with air, so open at least an hour before pouring and, if possible, decant.
  • Foolhardy Cabernet will continue to gain weight and dimension so drink now or cellar with confidence for the next 12 to 15 years.

Varietal Composition: 100% Cabernet Sauvignon

Elaboration: Aged 21 months in French oak barrels, 44% new.

Tasting Notes: A core of ripe, intense fruit and dark chocolate framed by subtle, spicy oak. Violet and red raspberry aromas give way to supple, textured flavors of blackberry and Bing cherries, with mineral tones offering an intriguing counterpoint in a lingering finish.

PRODUCER BACKGROUND

Foolhardy Vintners was born out of a shared passion for wine by co-founders and college friends Jonathan Edelman and Dan Sogg. They chose the name Foolhardy, as it “accurately captures the reality of starting a winery.”

Eldelman’s wine interest developed while attending culinary school in France and working in Michelin Star restaurants. He then shifted to the business world as an advisor to various wineries and restaurants, working harvest for over a decade at Remoissant Pére et Fils in Burgundy. Sogg worked for a Boston area retailer/importer prior to a vintage stint at Bordeaux Le Vignoble André Lurton and nine years as an assistant editor at Wine Spectator.

Having chosen to shift to the production side, the pair selected Washington State to make ripe, vibrant, fruit-forward wines that pair well with food. Due to the calibre of fruit being grown and the dynamic nature of the local wine culture, Washington was the easy choice. Their mantra is “Old world wine aesthetics meet new world vineyards.” Foolhardy believes the key to quality is simplicity and attention to detail.
