Klassen Cabernet Sauvignon
WHY WE LOVE IT
- 30-year-old vines from 2,200 feet in Calaveras County.
- A wine reflecting the site specific, cool micro-climates of the region.
- A Cabernet focused blend that is bold, deep, and hearty.
Varietal Composition: 77% Cabernet Sauvignon, 14% Cabernet Franc, 9% Petite Sirah
Elaboration: Cabernet blended with estate-grown Cab Franc for color and barrel-fermented Petite Sirah for weight, depth, color, and impact. Cabernet thrives at this elevation because of the extended hang time afforded by the hot days and long cool nights. Great skin development with textures and characters that are further enhanced by careful blending. The grapes are harvested by hand and crushed, destemmed, and fermented on skins for 15 days at the Mirraflores winery by Marco Cappelli. Twenty-four months in American Oak magnifies the spice and cedar notes of this noble variety.
Tasting Notes: Power and balance, Cassis, terroir and leather. A great example of California Cabernet Sauvignon. A beautiful long, smooth finish.
