WHY WE LOVE IT

  • Located near Auxerre in the Yonne department, the Chablis vineyard runs along a small river with a predestined name: the Serein.
  • The Cistercian monks of Pontigny planted vines here in the 12th century.
  • Established in January 1938, the Chablis AOC confirms the excellence of this dry white wine which, better than the wines of other vineyards, has managed to maintain its first rank thanks to a quality grape variety (Chardonnay) throughout its history.
  • The major foundation comes from the Jurassic, more precisely from the Kimmeridgian some 150 million years ago, and we thus find deposits of tiny oysters in the rock, vestiges of the warm and shallow sea which then covered Burgundy.
  • Drink now or store for 4 – 5 years.

Composition: 100% Chardonnay

Elaboration: In stainless steel vats to respect the typical characteristics of the Chablis terroir and allow all its minerality to express itself. Natural malolactic fermentation, if necessary. Fining with bentonite (clay which absorbs the proteins in the wine and clarifies it naturally). Cold storage in an isothermal vat to promote the precipitation of tartaric acid and thus avoid deposits which can form during the conservation of the wine. Light filtration on Kieselguhr: Diatomaceous earth which clarifies the wine naturally.

Tasting Notes: Golden color with green highlights. Discreet nose offering beautiful aromas of white flowers mixed with fine and delicate aromas of citrus fruits evolving towards notes of ripe fruits. Good attack on the palate. The developed flavors are fruity (cooked fruits) and nuanced by very beautiful mineral notes. Beautiful length on the palate.

PRODUCER BACKGROUND

One of the more prolific houses in Burgundy, this Chablis based firm has been under family control for 300 years now and run by Didier Lamblin and his brother Michel. Home base for Lamblin is on the northern edge of the village of Maligny, which is also the northernmost tip of the region’s Kimmeridgian soils. You can think of Lamblin as a “hybrid” negociant – About 20% of Lamblin’s production comes from their own vineyard land, and the remainder from partner growers. We’ve long found tremendous value in their Bourgogne Rouge and Bourgogne Blanc bottlings, and those remain our focus from Lamblin in terms of selection.
