WHY WE LOVE IT
- Monmousseau’s own Justin Marcel is responsible for the “official” creation of the sparkling Touraine category.
- From Cabernet Franc and Gamay grown on aubuis soil this wine sings out of the glass.
Varietal Composition: 70% Cabernet Franc – 30% Gamay
Elaboration: Grapes are destemmed, gently crushed and cold-macerated for several hours prior pressing. Fermentation takes place in stainless-steel tanks at 65ﹾF. After racking, the young wine refine on the fine lees until shortly before bottling. Yields: 58hl/ha
Tasting Notes: This cuvée is made according to the Méthode Traditionnelle process. Its secondary fermentation on laths and a maturation of 18 months in our troglodyte caves at a natural and constant temperature of 12°C, provide it with a special elegance.

PRODUCER BACKGROUND
Monmousseau is without question the Loire Valley’s most famous producer of sparkling wines. The winery was founded in 1886 with extensive vineyard holdings above ground and 15 kilometers of underground tunnels for fermentation and aging below them. Cremant de Touraine is something of a house specialty, as the were originally responsible for the creation of the Cremant de Touraine category. We are proudly working with a broad array of sparkling wines from Monmousseau, along with still examples of Vouvray and Cabernet Franc.
