Varietal Composition: 100% Pinot Noir

Elaboration: Guyot Training Method. Nicholas Millet utilizes regenerative agriculture practices. No herbicides are used. Fertilization is carried out organically with compost. Grapes are mechanically harvested and destemmed. The grapes undergo direct pressing, followed by cold settling. Fermentation takes place in temperature-controlled stainless-steel tanks for 15 days without malolactic fermentation. The wine is aged for 6 months in stainless steel tanks, where it remains on the lees with regular stirring. Finally, the wine is fined and filtered before bottling.

Tasting Notes: Pale salmon in the glass, with lifted notes of wild strawberry, blood orange, and a hint of white florals. The palate is dry and vibrant, offering juicy red berries, subtle citrus, and a deeper, chalky minerality. The Terres Blanches terroir lend a rounder texture and a lingering, saline finish. Elegant and expressive.

PRODUCER BACKGROUND

The vineyards of Nicolas Millet in the Sancerre Appellation of Loire have been providing outstanding grapes since the 1700s. The brothers Bernard and Pierre Millet acquired the land and began a family adventure in winemaking that has thrived and continues to the present day.

After studying wine in the legendary wine-producing region of Beaune, Nicolas Millet (son of François), took over the estate in 2010. Nicolas has continued the practice of respecting the traditions of wine-making while using innovative ideas. This includes organic, biodynamic, and regenerative agriculture farming techniques. The estate received its organic qualification in 2021.
