Oblivion Cabernet Sauvignon

Oblivion Cabernet Sauvignon

WHY WE LOVE IT

  • The fruit was sourced from the Paso Robles AVA including El Pomar, Geneseo, and Templeton Gab sub appellation regions.

Varietal Composition: Cabernet Sauvignon with a touch of Petite Sirah

Elaboration: Grapes were punched down three times a day to extract its rich color, flavor & tannin. Aged 17 months in 20% New French Oak.

Tasting Notes: Dark garnet in the glass, this Cabernet Sauvignon displays aromas of vanilla, dark fruit flavors of blackberry and chocolate with hints of tar and tobacco notes. On the palate this wine has a lush, silky texture with hints of cherry and currant fruit, sage, and roasted fig. Roasted red bell peppers and black truffle notes combine with a full variety of exotic spices to allure the senses.

Producer Background

In 1995, the Stoller family of Sunridge Nurseries and Dana Merrill of Mesa Vineyard partnered to plant the Chalk Knoll Vineyard in San Ardo. Yes, Paris Valley Road is a very real place, The Chalk Knoll Vineyard is nestled against this stretch of dirt road that meanders along the scenic foothills of the southern Monterey Coast and located only 35 miles in from the Pacific Ocean. These vineyards are rich with history dating back to the 1800’s and complete with a turn of the 19th century adobe, still standing today. Their wines are those of intensity and unique mineral qualities, wines you can drink tonight and for years to come. 2nd generation, Craig Stoller, leads the helm for this family-owned operation.

Oblivion is their 2nd label. Under this label, they have created a Chardonnay, Cabernet Sauvignon, and Zinfandel. The Chardonnay is sourced from the Central Coast. Their Cabernet Sauvignon is sourced in Paso Robles and the Zinfandel is sourced from the San Lucas AVA in Monterey.
