Varietal Composition: 92% Cabernet Sauvignon, 5% Syrah, 3% Petite Sirah

Breakdown: 62% Cabernet Sauvignon (Bellum’s Vineyard-Paso Robles), 12% Cabernet Sauvignon (Rorick Heritage Vineyard-Calaveras), 10% Cabernet Sauvignon (Delfino Vineyard-El Dorado Hills), 8% Cabernet Sauvignon (Baldinelli Vineyards-Shanandoah Valley), 5% Syrah (Oakmont Vineyard-Shenandoah Valley), 3% Petite Sirah (Element 79 Vineyard-Fair Play)

Elaboration: The richness and length in the Omen Cabernet Sauvignon comes from the deep alluvial soils and a maritime climate of the Paso Robles AVA. The tannins and structure  comes from the high mountainsides and decomposed granite soils of the Sierra Foothills. Each vineyard is picked separately, crushed/de-stemmed, cold soaked for three days and the grapes are fermented at 85 degrees fahrenheit. They undergo 10-20 days of skin maceration, low pressure pressing and are aged in oak for 9 months (20% new) before being released.

Tasting Notes: From blackberry to cassis and cedar, the complexity of the blend transcends into subtle notes of leather and dark chocolate. The mouth feel is rich with luscious and elegant tannins. A very bold and powerful wine that is still approachable and balanced.

PRODUCER BACKGROUND

Omen is produced by Atlas Wine Co, a new generation winery with family roots and that specializes in a vineyard to bottle approach with minimal winemaking intervention. Atlas Wine Co. was created in 2014 by three families and is currently operated by those same families – The Belli’s, The Cybulski’s, and The Remy’s. Their brand, Omen, is dedicated to the movement of Craft. Finding some of the best-hidden gem wine appellations throughout the West Coast. Omen wines are meant to be bold, with a lot of personalities.
