WHY WE LOVE IT

Composition: Sake

Elaboration: Junmai sake is made from rice, water, koji mold, and yeast, with no added alcohol. The rice is polished to 70-78%. Ozeki uses a “multiple parallel fermentation” method to ensure consistent quality, in which koji converts starches into sugars and yeast produces alcohol. They utilize high-quality water similar to Nada’s hard Miyamizu. After fermentation, the sake is pressed, filtered, and pasteurized.

Tasting Notes: Earthy, dry, full-bodied, with a hint of herbal notes.

Ozeki is a historic Japanese sake brewery that was founded in 1711. It is renowned for producing both traditional and innovative sakes. As one of Japan’s oldest and largest sake producers, Ozeki has been present in the U.S. since 1979, making it the first Japanese sake producer to brew sake locally in Hollister, California. The company is recognized for its high-quality products, which are made using highly polished rice and traditional brewing techniques.
