Varietal Composition: 100% Albariño

Elaboration: Vines are trained with a pergola system. Hand-picked grapes are sorted and macerated at 6ºC for 6 hours. Alcoholic fermentation with wild yeast occurs at 14-16ºC for 15 days. The wine matures on its lees in stainless steel tanks with bâtonnage for 7 months.

Tasting Notes: It is remarkable for its intense varietal perfume, with predominantly floral aromas (orange blossom and jasmine) and fruit reminiscent of citrus and tropical notes. On the palate, it is fresh, weighty, mineral, and long, with a persistent and aromatic finish.

PRODUCER BACKGROUND

Pazo Baión is a historic estate located in the Rías Baixas region of Galicia, with a rich history spanning over 500 years. Originally established around 1580 as the Casa de Fontán, this noble estate has played a significant role in the region’s viticulture. After enduring various changes over the centuries, it underwent significant redevelopment in the early 20th century.

In 2008, Pazo Baión was acquired and revitalized by Adega Condes de Albarei, transforming it into a prestigious winery that focuses on wine tourism. The estate is renowned not only for its unique 16th-century architecture, which enhances its charm and importance, but also for its high-quality Albariño wine, known for its excellent aging potential.
