‘WhaleSong’ Eola-Amity/Willamette Valley Chardonnay
WHY WE LOVE IT
- The WhaleSong Eola/Amity Hills Chardonnay is a limited-production white wine made by winemaker Matthias Pippig.
- It is sourced from high-elevation, cool-climate sites in the Eola-Amity Hills AVA, specifically from Royer Vineyard and Five Points Vineyard.
- The wine is known for its purity and bright energy.
Varietal Composition: 100% Chardonnay
Elaboration: Fermentation takes place in barrels using 100% native yeasts. Barrels used are 300L and 400L seasoned French oak as well as stainless steel. The barrel-aging period lasts 18 months. There is no filtering or fining.
Tasting Notes: Fragrance of mountain air, wildflowers, and dried herbs crushed between fingers; stone. Energy is like a sudden cool shower on hot asphalt.
