Varietal Composition: Gamay Noir
Elaboration: Hand harvested. The fruit underwent a cold soak prior to fermentation. Hand plunged once per day for 12 days. Pressed to stainless steel. No fining with a light filtration.
Tasting Notes: Aromas of Juby red cherries, woody herbs, boysenberry and a hint of spice. The palate is bright crunchy wild strawberries, rhubarb like acidity, with a lively savory edge, and polished tannins.
