St. Innocent Winery Blanc de Blancs
WHY WE LOVE IT
- St Innocent Blanc de Blancs is grown on Temperance Hill Vineyard located in the foothills of the coast range 10 miles southwest of Salem, Oregon.
- The vines were planted in 2006 and 2007 with Dijon clones 76 and 548 in well drained, sedimentary clay loam.
Varietal Composition: 100% Chardonnay
Elaboration: During the day warm air rises from the valley floor ripening the skins. At night, cool ocean breezes act to retain acidity. Planted on old sedimentary soils, the vines have a SW exposure at an elevation of 520’ to 580’.
Tasting Notes: “This is a soft, gentle sparkling wine with an aromatic set that nicely balances pear and chamomile aromas with earthy notes of fennel-flecked finocchiona salami. The wine’s yellow apple and catmint flavors are joined by a wee bit of tart guava. The bubbles are courteous, only barely tickling the nose.” -Michael Alberty, Wine Enthusiast.
