Varietals: 100% Sauvignon Blanc
Elaboration: Sauvignon Blanc grapes were whole-bunch pressed into stainless still tanks where spontaneous fermentation took place. Afterward, the wine was transferred to aged French oak barrels for 9 months of maturation, then bottled.
Tasting Notes: Notes of white currants, quandong, and hibiscus envelop the familiar (but restrained) flavors of guava and passionfruit, accompanied by hints of gunflint and the softest touch of damask rose.
