Varietal Composition: 100% Gamay
Elaboration: After an overnight rest in a large oak tank, we performed “semi-carbonic” fermentation, sealing the tank while pumping out the free run daily. Once dry, the whole clusters were pressed and aged in neutral French oak barrels for 8 months before bottling.
Tasting Notes: The Set Wines Gamay is a light, vibrant, and juicy red wine offering notes of raspberry, tart red cherry, and cranberry. It strikes a balance between fruit-forward flavors and cool-climate spice, finishing fresh without ever being jammy.
