Varietal Composition: Pinot Noir, Gamay

Elaboration: The Pinot Noir was crushed and destemmed, then left on the skins for 24 hours before pressing. Primary fermentation took place in a large wooden tank. As the wine approached dryness, it was pumped over a tank of whole-cluster Gamay, where the juice rested overnight, inoculating the Gamay with live yeast and picking up additional sugar. Finally, it was racked to neutral French oak barrels for 8 months, then racked again and bottled.

Tasting Notes: The unique co-fermentation process produced a Rosé with remarkable depth and complexity. Perfect with grilled salmon and herb butter, or melon and prosciutto for a pre-dinner snack.

The Set is a boutique winery in the Sta. Rita Hills AVA of Santa Barbara County, California, founded by brothers Billy and Christopher Hines. Known for its cool-climate wines, the winery blends California’s vibrant fruit with Southern hospitality, rooted in Louisiana values.

Located near the Pacific Ocean, the vineyards benefit from cool breezes, morning fog, and warm sunshine, allowing grapes to thrive. The Set prioritizes organic and biodynamic practices, focusing on soil types, sun exposure, and vine orientation.
