Twill Cellars Willamette Valley Chardonnay
WHY WE LOVE IT
- This Chardonnay is harvested at just the right time (which can be a very small window), when acids remain firm, and flavors begin to flood in. If picked too early and flavors are all green apple and melon and if picked too late, the hot notes of tropical fruit can overly simplify the wine.
- Twill Cellars Chardonnay is a unique blend of Chardonnay grapes from five vineyards in the Willamette Valley, each with its own terroir and soil type, including Stormy Morning (20%), Vojtilla (14%), Bracken (10%), Johan (26%) and Molly’s (30%).
Varietal Composition: 100% Chardonnay
Elaboration: 40% whole cluster pressed utilizing Champagne press cycles. 60% crushed and pressed utilizing Champagne press cycles. Two press fractions for each lot, with the first press fraction lightly sulfured with the second press fraction receives no sulfur. The wine is settled overnight before barreling down. Fermentation takes place in 25% new oak, 26% concrete egg and 49% three fills or greater.
Tasting Notes: Intense aromas of kaffir lime leaf, coconut, lemon oil, pastry, saline and toasted grain lead the opening. With time, notes of tangerine, green apple, gardenia and matchstick appear on the aromatics and combine with bass notes of peach and fresh pineapple. On taste, loads of sinewy citrus and chalky stone fruit notes including tangerine, key lime, and nectarine are followed with resonating flavors of saline and cream. Mouthwatering and brimming with extract. The balance of texture and brightness on the palate highlight the powerful nature of chardonnay.

PRODUCER BACKGROUND
Twill Cellars is located in West Linn, Oregon, just 30 minutes south of downtown Portland. Yet it might as well be a world away. In 2000, Molly and Darrel Roby (along with their two Bernese Mountain dogs, Mica and Saylor) began their journey as growers by planting a 2.7 acre vineyard.
Chris Dickson, following studies in Psychology and Biology, spent years working for several well-regarded winemakers around the world. Jonathan Sundy, an artist who knew Chris in high school in Pittsburgh, Pennsylvania, contributes his talents to the project.
