Twill Cellars Willamette Valley Rosé of Pinot Noir
WHY WE LOVE IT
- Organic wine management. All of the grapes are sourced from three vineyards, with differing viticulture areas (AVA) and unique terriors and winemaking practices. All are dryland farmed (no irrigation), with sustainable practices at the very least. The vineyards include Bracken, Molly’s, and Stormy Morning, all of whom are uncertified organic and dry farmed.
Varietal Composition: 100% Pinot Noir
Elaboration: All the fruit is picked with the intention of pressing. 60% of the Pinot Noir is whole bunch pressed, while the remaining 40% is partially crushed into the press for some texture. Hearts and Taille are separated, allowing the fermentation of different profiles. Typically the hearts, the middle of the press cycle, offers a more elegant, mineral expression with higher acidity, while the taille is the last part of pressing, yielding a higher fruit expression with lower acidity. This bottling is composed of 75% hearts and 25% taille. Some of the remaining taille is utilized for their MV red blend.
Partial malolactic completion, and lightly filtered prior to bottling. No inoculations for both primary and secondary fermentations. No heat or cold stabilization conducted, the wine will throw harmless light crystals if refrigerated for a couple of days.
Tasting Notes: Enveloping aromas of crushed strawberries and ripe juicy grapefruit are held firm with notes of apricot and a secondary layer of satsuma orange and rose petals. On the palate, brimming linear flavors of Star Ruby grapefruit and Rainier cherries are marked with a crushed stone like minerality.

PRODUCER BACKGROUND
Twill Cellars is located in West Linn, Oregon, just 30 minutes south of downtown Portland. Yet it might as well be a world away. In 2000, Molly and Darrel Roby (along with their two Bernese Mountain dogs, Mica and Saylor) began their journey as growers by planting a 2.7 acre vineyard.
Chris Dickson, following studies in Psychology and Biology, spent years working for several well-regarded winemakers around the world. Jonathan Sundy, an artist who knew Chris in high school in Pittsburgh, Pennsylvania, contributes his talents to the project.
