Varietal Composition: 100% Dolcetto
Elaboration: Grown in the microcosm of blue slate soil inside Clare Valley – the famed Polish Hill River. The attraction is 20-year-old Dolcetto vines grown in an inland, continental climate – warm days and alarmingly cold night lend great acid retention whilst developing flavor. Harvested and destemmed only – with a short 5-day maceration prior to pressing. Whole berry, wild ferment. The majority of the oak treament is in stainless steel a small parcel in new Slovenian Oak Foudre.
Tasting Notes: A nose of bright, maraschino cherries, plums and red fruit – with a smoothening palate weight and svelte tannin structure, without sacrificing a tightening acidity.
“The medium to full-bodied 2017 Cherry Fields Dolcetto packs in plenty of black cherries, plum and cocoa flavors. Remarkably consistent with the 2016 version, this one does seem a bit smoother and silkier, with brighter, bolder fruit and a crisp edge to the finish.
