WHY WE LOVE IT

  • A blend of three regions – Clare Valley, Riverland, and Adelaide Hills.
  • Fresh flavor and a perfect summer wine, but great year round!

Varietal Composition: 40% Sangiovese, 30% Grenache, 30% Pinot Gris

Elaboration: We’ve dabbled in rosé in the past, playing around with a multitude of varieties (Nero, Nebbiolo, Barbera, etc.) – never really committing one way or another, despite being the most requested wine style for us to add to our repertoire (after Pet Nat of course).

After playing with some of our Polish Hill River Sangiovese – generally destined for Truffle Hound – we, at last, have become enamored! We’ve then backed it up with some Old Vine Grenache from the Riverland that we’ve admired from afar for many years, finally taking the plunge for rosé, then lifted with a bit of Adelaide Hills Pinot Gris that’s seen a lick of skin contact for that copper hue. In short, this is as Unico as a rosé can be – a blend of our 3 key regions, some beautiful vineyards, in our house style. The soils are red clay loam on shale, ancient sandy limestone soils.

Tasting Notes: Fresh, vibrant and bone dry.

A new venture in the Adelaide Hills by winemaking couple, Brendan and Laura Carter. Following their passions for Italian-inspired, textural and site-expressive wines, they seek to create Australian examples of Mediterranean varieties in an approachable and jovial fashion..
