Unico Zelo Pastafarian Nebbiolo
WHY WE LOVE IT
- Unico Zello is part of the “New Australia” movement focusing on alternative varietals, sustainability, natural yeast, vegan friendly.
- Laura Carter, chief winemaker and her husband, Brendan, are incredibly passionate about the soil and produce in Australia.
- You know what we are also fond of? PASTA. We’re die-hard pastafarians and love a great Nebb with our bowl of noodles.
- There is a bit of a shift in the Pastafarian, with the inclusion of Sangiovese! Still, this wine is Nebbiolo through and through…
Varietal Composition: 44% Nebbiolo; 39% Sangiovese; 13% Merlot; 4% Nero
Elaboration: We’re incredibly lucky to work with one of the most prestigious vineyards of Nebbiolo in this country, with some of Australia’s most revered examples coming from the place we call home – Gumeracha, Adelaide Hills. We hand pick the fruit as a team.
Tasting Notes: Aromatically it’s a twist on the classic “tar and roses” adage; think more violets and pencil shavings with a whiff of cardamom from some silky oak. But this is far more red fruited and juicy than your average Nebb, with ripples of strawberries and crushed black olives over the top of a pitch perfect balance of fresh acidity to fine grain tannins.
