Valdemar Estates Walla Walla Cabernet Sauvignon

Valdemar Estates Walla Walla Cabernet Sauvignon

WHY WE LOVE IT

  • Walla Walla Cabernet is sourced from Eventide Estate, Dionysus, and Seven Hills Vineyards.
  • The vines in the Eventide Vineyard root into solid basalt rock. creating limited yields of small clusters with vibrant flavors.
  • The vibrancy of this wine is a testament to the terroir; our Eventide estate vineyard’s unique characteristics include high winds and a north-east facing slope, resulting in limited yields and small clusters.
  • These conditions contribute to the development of thick- skinned grapes with vibrant flavors and refreshing acidity.

Varietal: 77% Cabernet Sauvignon, 15% Petit Verdot, 8% Merlot

Elaboration: Fermented in steel with 21 days of skin contact. Cap management consisted of pump-overs twice daily. Aged 19 months in French oak barrels, 25% new and 75% used oak.

Tasting Notes: Enticing bouquet, with fig, black cherry, and sage dominating the aroma, accompanied by subtle notes of black tea and fresh earth. The concentration of flavors on the palate is remarkable, offering a full tannin profile mid-palate.

PRODUCER BACKGROUND

“Always pioneering” is Bodegas Valdemar’s motto. Five generations of the Valdemar family in Rioja, Spain, have remained committed to producing wines reflecting the diversity of their vineyards. For over 135 years, the family has incorporated innovative initiatives like creating the first barrel-fermented white wine and the first Tempranillo white. They have also been instrumental in recovering varietals presumed to be extinct, such as the Maturana grape and the Granciano variety.

In 2019, they established the first non-American winery in Washington State, led by siblings Jesús and Ana Martínez Bujanda, CEO and COO of Valdemar Estates. Under the “inherited know-how” they received from previous generations, the innovative winemakers have turned their land into sustainable wine agroecosystems, using organic matter to improve fertility, cover crops, pheromones to control pests, varietal diversity, biological corridors, and native forests, resulting in an the International “Wineries for Climate Protection” certification. This designation’s four pillars align with the Bodegas Valdemar commitment to reducing the carbon footprint, using renewable energies, and managing water while reducing waste.
