WHY WE LOVE IT

  • The Wildman Wines Astro Bunny Pet Nat is a sparkling Rosé from South Australia.
  • It is made from organic and biodynamic grapes, mainly Fiano, Malvasia Bianca, and Nero d’Avola. This blend gives the wine a hazy peach-orange color and soft foam.
  • The “Pet Nat” style means it’s bottled before fermentation finishes, which creates natural effervescence.
  • It’s best to gently tip or shake the bottle before opening to mix the fine lees for the best texture and flavor.

Varietal: Primarily Fiano & Pecorino, with small amounts of Nero d’Avola, Malvasia, Muscat

Elaboration: Fiano and Pecorino are picked first, followed by aromatic varieties and reds later. The Muscat gets 24 hours of skin contact for aromatics, while the Nero is pressed quickly for color and then co-fermented. The wine starts bright candy pink and turns peachy orange over winter due to no sulfur. Bottled with about 12 g/L residual sugar, it ferments in the bottle to become fully dry and achieve around 3 bar of pressure, resulting in a gentle foam. Wild yeast, no adds, no filtration, no fining, zero sulfur = 100% natural goodness.

Tasting Notes: Explosive aromas with white peach, tangerine, and cut lime. The bubbles are soft and more foamy, not aggressively fizzy, with the classic Astro Bunny flavors of peach and nectarine, with a smashable watermelon wetness providing great gluggability.

After moving to Australia a decade ago, he launched his playful yet technically adept pét-nat lines, Astro Bunny and Piggy Pop, with the goal of creating fun, fruity, and fault-free sparkling wines.
