Varietal: 71% Nero d’Avola, 8% Lagrein, 6% Montepulciano, 6% Prieto picudo, 6% Canada Muscat, 3% Aglianico

Elaboration: Nero d’Avola was harvested first and blended with Lagrein, Montepulciano, Prieto Picudo, and Aglianico. Co-fermented with whole clusters and pressed early for a lighter color and balanced tannins, it uses wild yeast and has no additives. With around 12 g/L residual sugar, it finishes fermentation in the bottle, resulting in a gentle foam—100% natural with no filtration, fining, or sulphur.

Tasting Notes: The aromas are a riot of cherries – red cherry, cherry pip, glacé cheery – all the cherries! In your mouth she explodes with pomegranate, blood orange, spice and a savory, amaro twist of raspberry salted liquorice.

Wildman Wines, founded by English-born Master of Wine Tim Wildman, specializes in pétillant naturel (pét-nat) sparkling wines made from organic and biodynamic grapes. After moving to Australia a decade ago, he launched his playful yet technically adept pét-nat lines, Astro Bunny and Piggy Pop, with the goal of creating fun, fruity, and fault-free sparkling wines.
