Wölffer Hibiscus Cider

Wölffer Estate Dry Hibiscus Cider

WHY WE LOVE IT

  • Wölffer Dry Ciders are made to capture an elegant cider style, as well as to evoke the bohemian Hamptons lifestyle and spirit that inspired their creation.
  • This Hibiscus Cider is made exclusively from New York state apples from DeFisher Orchard and is produced in Rochester, NY.
  • It is a vibrant, yet casual beverage that perfectly bridges the gap between beer, wine and ready-to-drink.

Varietal Composition: Ida Red 40% Mutsu (Crispin) 20% Golden Delicious 20% Jonagold 10.0% Misc. (Goldrush, Greenings, McIntosh) 10%.

Elaboration:  Hand picked. Pressed in winter. The juice was settled and carefully racked of any sediment. Clean juice was inoculated with a Champagne yeast to start fermentation which was carried out at a cool 59 degrees and finished after 20 days. The hard cides was then chilled, followed by filtration for clarity. Natural Hibiscus essence added. Color achieved by the addition of organic purple sweet potato extract. Carbonated and bottled cold-sterile.

Tasting Notes: Light, shiny rose in color. Beautiful floral aromas fill the air full of Hibiscus and red current. The mouthfeel is fruit driven with ripe apple flavors and more Hibiscus notes. There is a very satisfying vibrancy and almost a vanilla character. Yet the finish stays elegant and refreshing and the bright acidity and the lovely CO2 mousse provides a perfect balance and almost a dry finish. This is a very outgoing and giving cider with lavish Hibiscus fruit, great structure and finesse.
