WHY WE LOVE IT

  • Wölffer Dry Rosé Cider is produced and bottled in Rochester, New York.
  • It is made exclusively from apples grown in New York state, 5% come from the Halsey Farm in Bridgehampton and 95% by DeFisher Fruit Farms near Rochester. and evokes the style, sophistication and spirit of summer in the Hamptons. Rosier and slightly sweeter than their white cider due to a dash of organic extract.
  • This non-alcoholic sparkling has an elegant lightness from start to the long satisfying and cleansing finish.

Varietal Composition: 30% Idared, 20% Mutsu (Crispin), 20% Law Rome, 10% Jonagold, 10% Golden Delicious, 10% Northern Spy

Elaboration:  Hand-picked. Fruit pressed and allowed to settle. Then carefully racked of any sediment. Clean juise was inoculated with wine yeast, Epernay 2 which is commonly used for sparkling wines, to start fermentation which is carried out at a cool 59 degrees and finished after 7 days. The hard cider is then chilled, followed by filtration for clarity. Carbonated and bottled cold sterile..

Tasting Notes: Bright shiny pink with a purple hue. The aroma is lush, and fruit driven with fine apple aromas and elegant yeast notes. It is beautifully pure and clean. The mouthfeel is amazing filled with ripe fruit and refreshing fine CO2 mousse. There is great structure and complexity, the fruit is seamless from start to the long lingering finish. Overall balance and playfulness between the tannins, the vibrant acidity, and the sweet fruitiness.

PRODUCER BACKGROUND

Wölffer Estate was founded in 1988 by Christian Wölffer, a man with great creative vision and a huge passion for life. The estate today is owned and operated by his children, Marc and Joey Wölffer and Winemaker/Partner Roman Roth.

The estate spans approximately 175 acres including the acclaimed 55 acre sustainably farmed vineyard located in Sagaponack, NY. They also own 28 acres on the North Fork of Long Island, 200 acres in Mendoza, Argentina and 2.5 acres in Mallorca, Spain. Further, they partner with carefully selected growers on 338 acres on the North Fork of Long Island as well as 1,750 acres in Côtes de Provence, France.
