- This non-alcoholic sparkling wine, made from organically grown grapes, was developed as a follow-up to the success of the Spring in a Bottle Rosé.
- Crafted to bring purity and elegance to the non-alcoholic category, offering the poise of a traditional Blanc de Blancs without the alcohol.
Varietal Composition: 100% Airén
Elaboration: The wine goes through the full winemaking process — pressing, fermentation, and aging — before the alcohol is removed via vacuum distillation, keeping it under 0.5% ABV while preserving wine-like character.
Tasting Notes: Pale, shiny yellow in color. Pure and clean on the nose, with loads of floral notes, white peach, ripe golden grapes, and cantaloupe. Vibrant on the palate with a refreshing CO2 mousse, lovely acidity balanced by pure fruitiness, and some residual sweetness leading to a light, elegant, and playful finish.

PRODUCER BACKGROUND
Wölffer Estate was founded in 1988 by Christian Wölffer, a man with great creative vision and a huge passion for life. The estate today is owned and operated by his children, Marc and Joey Wölffer and Winemaker/Partner Roman Roth.
The estate spans approximately 175 acres including the acclaimed 55 acre sustainably farmed vineyard located in Sagaponack, NY. They also own 28 acres on the North Fork of Long Island, 200 acres in Mendoza, Argentina and 2.5 acres in Mallorca, Spain. Further, they partner with carefully selected growers on 338 acres on the North Fork of Long Island as well as 1,750 acres in Côtes de Provence, France.
