WHY WE LOVE IT

  • The average age of the vines is 50 years.
  • The grapes are hand picked and aged 12 months in used French oak barrels.

Varietal Composition:  100% Pinot Noir

Elaboration: The pruning style used is Cordon de Royat and Guyot simple
Manual harvest. Green work (de-budding, leaf-thinning,…) The grapes are triple sorted, in the vineyard (twice) and in the winery on sorting table.

Winemaking Grapes are destemmed, put into vat at 12°c during 5 days (cold pre-fermentary) to extract the primary aromas. Indigenous yeasts are used. Smooth extraction respecting the grape variety, terroir and vintage. Fermentation lasts around 20 days.

Tasting Notes: Beautiful ruby ​​color; Aromas of red fruits and violets. Delicate woodiness that gives a beautiful structure.

PRODUCER BACKGROUND

The Girardin name has been synonymous with elite level Burgundy for 700 years, most recently through the wines of Justin’s uncle, Vincent Girardin, and his father, Jacques Girardin.  With the provenance of this family’s holdings and the talent seemingly entrenched in this bloodline, Justin is more than a name to watch – He is without question one of the most exciting young names in the region, farming 17 hectares of vines in Pommard, Chassagne Montrachet, and Savigny-lès-Beaune using organic and biodynamic practices.

Transparency is the name of the game – Only native yeast is used here, and it is rare to experience the influence of new oak in any of Justin’s bottlings.  The family believes in clonal diversity as both a way to preserve culture and a way to increase complexity of finished wines – You’ll see a dizzying number of clonal selections in each of their vineyard holdings.  These are Burgundies of precision, and also wines that deliver tremendous value.
