  • The plot for this wine is on a 15% slope, facing East-South East, which is South of Nuits.
  • The average age of the vines is 15 years.
  • This Pinot Noir is grown in light brown soils, scree of white oolites.
  • Best served at a temperature of 15 to 16°C and best enjoyed between 7 to 10 years.

Varietal Composition: 100% Pinot Noir

Elaboration: Vine management includes tillage, partial weeding, grassing of treatment rows, reasoned control, stripping, manual harvesting, sorting in the vineyard before harvest (Verjus , damaged grapes). Strict sorting in the winery, vatting of the whole destemmed berries by gravity; Enzyming, yeasting, pre-fermentation cold maceration for one-week, daily punching down, final warm maceration. 3 weeks vatting. Manual devatting using tanks by gravity in the stainless-steel pneumatic press. The wine is aged 12 months in barrels, 1/3 of which new, malolactic fermentation in barrels, then blending in stainless steel vats for 3 months. Light filtration 5 microns before bottling to improve the brilliance of the wine and its aromatic purity.

Tasting Notes: Dense and sustained color, the freshness and intensity of its fruitiness charms us from its youth. Over the years, the mouth displays an ample and silky roundness. A fruitiness evolving towards macerated cherry, stone, liquorice and fine balsamic scents as well as very fine animal nuances.

PRODUCER BACKGROUND

Domaine Guy & Yvan Dufouleur was established on the slopes of Nuits-Saint-Georges in 1596, and is currently managed by Yvan Dufouleur and his uncle Xavier. The Dufouleur family sold the negociant arm of their business, “Dufouleur Père et Fils,” in 2006, wanting to focus exclusively on estate bottled wines. Four hundred years is a long time for any winery, and through the centuries the family has acquired a whopping 28 hectares of prime vineyard sites extending from Fixin to Santenay. This portfolio includes the exclusive ownership of Fixin Clos du Chapitre Premier Cru. Farming is natural, and cellar work is hands-off. These sensory, revelatory wines are a must for anyone interested in distinctive Burgundy.
