WHY WE LOVE IT

Varietal Composition: 100% Palomino Fina

Elaboration: The grapes come from three organic vineyards that are carefully cared for in the historic Balbaína, Añina and Burujena estates. Manually harvested, one of the vineyards is pruned with a double cordon and the other with “Vara y pulgar”. Slow fermentation processes. Temperature controlled at 17° C in small capacity stainless steel. Spontaneous fermentation. Aging with lees for four months.

Tasting Notes: Clean and bright. The nose has complex nuances of ripe apple and peach, spicy notes. The mouth is broad, creamy palate, light notes of ripe fruit and a soft saline nuance.
