WHY WE LOVE IT

  • The climate here in Saint Chinian, long, hot summers and cool nights, are well suited to produce high quality fruit.
  • Vinifying each varietal separately helps ensure the wine shows the true characteristics of the region, as well as, maintains the high standard of quality wine making from Jean-Claude Mas.

Varietal Composition: 55% Syrah, 25% Carignan, 20% Grenache

Elaboration: Destemming, each variety is vinified separately. Fermentation last 6 to 8 days under temperature control followed by maceration for 3 weeks. After the malolactic fermentation, the different varietals are blended and 30% of the wine is then aged in American oak barrels for 8 months, the rest in cement vats.

Tasting Notes: Dark red color blackberry marmalade, violet with hints of balsamic. Round and velvety tannins, moving towards mature black fruit flavors.

Jean-Claude Mas, founder of Domaines Paul Mas in 2000, has launched a complete range under his own name, wines with true Languedoc character, a sense of place, a history, but most important of all, these are fine wines made to give the utmost pleasure to the drinker. These wines represent the diversity of terroirs within the same appellation and also the essence of each traditional appellation in the Languedoc. They are a fusion between the tradition of winemaking and the new approach to wine, embodied by Jean-Claude Mas.
