WHY WE LOVE IT

  • Walla Walla Cabernet has been established in the World as its own style and flavor profile. This wine is no different! It is amazing to create big blends and straight wines that are fruit forward, have great acid and lots of complex layers.
  • Cougar is a very dense dark style blend that ages extremely well. Consider burying this wine and think about it many years down the road.
  • WA wines do drink very well their whole lives, so it’s not the end of the world if you can’t resist temptation to pull that cork!

Varietal Composition: Cabernet Sauvignon, Cabernet Franc

Elaboration: The grapes were grown on the Pepperbridge, Blue Mountain, Les Collines and Summit View Vineyards. Barrel Aging for 26 months in French and American oak, 20% new.

Tasting Notes: Ruby red in color with a sultry appearance. Aromas of blackberry and black raspberry. Very fruit forward with subtle hints of spice. Bursts of berry fruit and meaty flavors flood the palate. Good acid with balanced tannins. A long, bold finish.

PRODUCER BACKGROUND

Before he retired as a John Deere dealer in the state of Washington, David Huse came to know many vineyard owners in the Walla Walla Valley. What started as a post-retirement experiment grew into a full-fledged passion for the Huse family. As the Five Star Cellars website proclaims, they use “grapes only from the highest quality vineyards in the Walla Walla Valley.”

David started Five Star Cellars in 2000, and the first vintage consisted of 120 cases of Cabernet Sauvignon. That doubled the following year with Cabernet and Merlot. After a 2002 remodel, Dave’s son Matt took over as winemaker and they released their first vintage, which quickly sold out. They added a Syrah to their growing list of vintages and continue to draw fruit from some of the area’s storied vineyard owners.
