  • The grapes come from the Weets Family Vineyard (Rattlesnake Hills) in Columbia Valley AVA, Washington.
  • This Reserve Cab went through extended barrel aging (22 months).

Varietal Composition: 100% Cabernet Sauvignon

Elaboration : The grapes are whole cluster harvested and placed in an open top fermenter with daily pigeage for three weeks. It is then pressed and racked into neutral Burgundy barrel. Native yeast ferment. No sulfur added. Unfiltered.

Tasting Notes: Aromas of blackberry, cassis, cedar and leather mirrored on the palate with some brambly, herbaceous character, great structure and well integrated tannin due to extended barrel aging (all neutral Burgundy barrel) balanced by pronounced acidity.

PRODUCER BACKGROUND

Gregory Cantu and Christopher Sky were each self-taught sommeliers at two different restaurants in Portland, Oregon. They met while working as maître d’s at the International Pinot Noir Celebration in McMinnville. They found they had much in common, they are both Colorado natives, fans of Loire Valley wines, and they shared the same sarcastic, irreverent sense of humor.

They became friends and began spending their free time helping with harvest at small wineries. Cantu also devoted an entire harvest season to working at a winery. In the summer of 2017, they were sitting in Sky’s backyard Cantu recalls, “We were drinkin’ some Rosé, and we were like, let’s make some Rosé, and then we did.”
