Pazo Baión

Pazo Baión is a unique wine project. Distinct. Wines from five centuries of history to build a legacy that speaks of culture and architecture, but above all of Albariño wines. The first bibliographical references to the property date from the 16th century, at that time under the ownership of the lords of Sarmiento.

At the beginning of the 20th century, Don Adolfo Fojo Silva, a wealthy Galician emigrant who returned from Argentina, bought the property and launched an ambitious renovation of the old pazo. He leaves behind the sobriety of previous centuries to build the two Victorian-style towers, a winery, dairy and more.

At that time, most of the farm’s surface was used for growing cereals and grazing cattle. Wine, however, was still present. The owners maintained a notable production to later allocate it to commercialization.

In the 1970s when the last heirs of Don Adolfo Fojo sold the country house to a company that carried out the first technical planting of Albariño in Rías Baixas. A vineyard that would end up becoming a reference for professionals in the sector.

In 2008, Adega Condes de Albarei acquired the Pazo Baión winery and has continued to produce quality Albariño wine. The wines from the Pazo Baión winery today are indisputable references within the Rías Baixas Denomination of Origin.
