Varietal Composition: 100% Cabernet Sauvignon

Elaboration: Traditional vinification. Fermented in stainless steel vats. The wine ages for 15 months in Frech and American oak, 30% new.

Tasting Notes: Aromas of cassis, vanilla and cedar that lead to a rich mid-palate impression of ripe currants, sandalwood and subtle herbal notes. Medium to full bodied, ripe and complex, with a long, lingering finish.

PRODUCER BACKGROUND

Sobon Estate is a historic winery located in Amador County, California. Founded in 1989 by Leon and Shirley Sobon, the winery is situated on the site of the D’Agostini Winery, which is recognized as a California State Historic Landmark. Nestled in the Shenandoah Valley, Sobon Estate is known for producing high-quality wines, particularly Zinfandel, using grapes sourced from its high-elevation vineyards. It is one of the first four wineries established in the area. The Sobon family also owns and operates Shenandoah Vineyards. The estate produces a diverse range of wines, including red, white, and dessert varieties, all crafted using sustainable and natural farming methods.
